  • 1¾ cups water
  • ½ cup uncooked long-grain brown rice
  • ⅛ teaspoon salt
  • ¾ cup chopped Golden Delicious apple
  • ½ cup fat-free milk
  • 2 tablespoons honey
  • 2 tablespoons dried cranberries, chopped
  • Ground nutmeg (optional)

  1. In a medium heavy saucepan, bring the water to boiling. Stir in uncooked rice and salt. Cook, covered, over low heat for 40 to 45 minutes or until liquid is absorbed, stirring occasionally.
  2. Stir in apple, milk, honey and dried cranberries. Cook, uncovered, about 10 minutes more or until mixture is slightly thickened and creamy, stirring occasionally. Serve warm or chilled. If desired, sprinkle each serving with nutmeg.
