Cran-Apple Chicken Salad with Poppy Seed Dressing
Place salad greens on a serving platter. Top with chicken, apple, celery and cranberries.Advertisement
For dressing: In a screw-top jar, combine shallot, vinegar, canola oil, apple juice concentrate, poppy seeds, mustard and salt. Cover and shake well.
Drizzle dressing over salad. Sprinkle salad with cheese.
Tip: You will need about 8 ounces of cooked skinless, boneless chicken breast for 2 cups of shredded meat.
