  • Place salad greens on a serving platter. Top with chicken, apple, celery and cranberries.

  • For dressing: In a screw-top jar, combine shallot, vinegar, canola oil, apple juice concentrate, poppy seeds, mustard and salt. Cover and shake well.

  • Drizzle dressing over salad. Sprinkle salad with cheese.
