We add cranberries and apples to boost the flavor in this 25-minute chicken salad recipe.

  • 1 5- to 8-ounce package mixed salad greens
  • 2 cups shredded cooked chicken breast (see Tip)
  • 1 medium Braeburn or Gala apple, cored and chopped
  • 1 stalk celery, thinly bias-sliced ( ½ cup)
  • ⅓ cup dried cranberries
  • 1 medium shallot, minced (4 teaspoons)
  • 2 tablespoons white wine vinegar
  • 2 tablespoons canola oil
  • 1 tablespoon frozen apple juice concentrate
  • 1 teaspoon poppy seeds
  • ½ teaspoon Dijon-style mustard
  • ⅛ teaspoon salt
  • 1 ounce white cheddar cheese, shredded ( ¼ cup)

  1. Place salad greens on a serving platter. Top with chicken, apple, celery and cranberries.
  2. For dressing: In a screw-top jar, combine shallot, vinegar, canola oil, apple juice concentrate, poppy seeds, mustard and salt. Cover and shake well.
  3. Drizzle dressing over salad. Sprinkle salad with cheese.
  • Tip: You will need about 8 ounces of cooked skinless, boneless chicken breast for 2 cups of shredded meat.
