1 medium head radicchio, trimmed and coarsely chopped
3 cups packaged fresh baby spinach
1 medium pear, cored, quartered and thinly sliced
½ medium red onion, halved and thinly sliced
¼ cup white wine vinegar
1 tablespoon olive oil
1 tablespoon honey
1 teaspoon Dijon-style mustard
⅛ teaspoon salt
¼ cup pine nuts, toasted
In a large bowl combine radicchio, spinach, pear and red onion; set aside. In a small screw-top jar combine vinegar, oil, honey, mustard and salt. Cover and shake well to combine. Pour over radicchio mixture; toss to coat. Divide salad among four serving plates. Sprinkle with pine nuts.
