Apple-Balsamic Vinaigrette

Ingredients

    • ¼ cup finely chopped shallots
    • ¼ cup apple cider
    • ¼ cup white balsamic vinegar or balsamic vinegar
    • ¼ cup olive oil
    • 2 teaspoons Dijon-style mustard
    • ¼ teaspoon salt
    • ⅛ teaspoon black pepper
    • Fresh spinach (optional)

Directions

  • 1 In a screw-top jar, combine shallots, apple cider, vinegar, olive oil, mustard, salt, and black pepper. Cover and shake well. Serve over fresh spinach if desired.
