Tahini, which is a paste made from ground sesame seeds, makes sauces and dressings super creamy without any dairy or mayonnaise. Use it as a salad dressing, a spread on sandwiches, or a sauce for falafel (see associated recipe, below).

  • 3 tablespoons tahini
  • 3 tablespoons warm water
  • 2 tablespoons lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1 small clove garlic, grated
  • ¼ teaspoon salt
  • Lemon zest for garnish

  1. Stir tahini, water, lemon juice, oil, garlic and salt together in a small bowl. Garnish with lemon zest, if desired.
  • To make ahead: Refrigerate for up to 4 days.

This was perfect with falafel. After reading the other review, I added the lemon and water a Tbsp at a time and did use less lemon juice (but wanted it thin so the used the amount of water called for).

I had this sauce with the Falafel Burgers. It was yummy, but, I feel it was too runny and too lemony for me. I added 2 more TBS tahini to thicken it, and that helped cut down on the lemon flavor. Hubby was so so with the sauce. I would make it again, but only add 1 TBS of lemon juice, and start off with 1 TBS of water, and gradually add.
