These simple spritzers are made with club soda and cranberry juice which has been infused with mint leaves. Cool and refreshing on a hot summer day!

  • 3 tablespoons fresh mint leaves
  • 3 cups light cranberry-raspberry juice or light cranberry juice
  • 1 cup club soda, chilled
  • Ice cubes
  • ½ cup raspberries, blackberries and/or blueberries
  • Fresh mint sprigs

  1. Place the 3 tablespoons mint leaves in a pitcher. Use the back of a large spoon to lightly bruise the leaves. Stir in cranberry-raspberry juice. Cover and chill for 2 to 4 hours.
  2. Strain mint from juice and discard the mint. Stir club soda into juice. Pour into ice-filled glasses. Top with fresh berries and mint sprigs.
