Grilled Romaine with Feta

“Next time you're preparing meat or fish on the grill, try this grilled salad recipe. Romaine lettuce is a perfect choice for grilling and it's ready in just a few minutes. Slightly charred and wilted, the taste is enhanced with a simple lemon dressing and a sprinkling of feta cheese.”


    • ⅓ cup lemon juice
    • 3 tablespoons olive oil
    • 2 cloves garlic, minced
    • ¼ teaspoon kosher salt
    • ⅛ teaspoon black pepper
    • 2 hearts of romaine lettuce, halved lengthwise
    • Nonstick olive oil cooking spray
    • ¼ cup crumbled reduced-fat feta cheese


  • 1 In a screw-top jar combine lemon juice, olive oil, garlic, salt and pepper. Cover and set aside. Lightly coat cut sides of hearts of romaine with cooking spray.
  • 2 For a gas or charcoal grill, place romaine lettuce, cut sides down, on the rack of a covered grill directly over medium heat. Grill, covered, for 1 to 3 minutes or until grill marks develop on the romaine and the romaine is slightly wilted.
  • 3 Place each romaine half on a serving plate. Shake lemon mixture well to combine and drizzle evenly over grilled romaine. Sprinkle with feta cheese.
