3 cups whole-wheat or regular orzo
½ cup red and yellow cherry tomatoes, or grape tomatoes, halved
¼ cup crumbled reduced-fat feta cheese
2 tablespoons orange juice or reserved pasta water
1 tablespoon chopped fresh basil or Italian parsley
½ tablespoon chopped fresh thyme
Cook orzo in a medium saucepan according to package directions, omitting any salt or oil. Drain the orzo, reserving 2 tablespoons pasta cooking water, if not using orange juice. Return the orzo to the pan.
Stir in cherry (or grape) tomatoes, feta cheese, orange juice (or the reserved pasta water), basil (or parsley), and thyme.
