¼ cup low-sugar apricot preserves
⅛ teaspoon ground cinnamon
4 (6 ounce) bone-in pork loin rib chops, cut ½ to ¾ inch thick (see Tip)
Snipped fresh thyme
For glaze, in a small bowl stir together apricot preserves and cinnamon.
For a charcoal grill, place chops on the grill rack directly over medium coals. Grill, uncovered, for 8 to 10 minutes or until done (160 degrees F), turning once and brushing with glaze halfway through grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place chops on grill rack over heat. Cover and grill as above.) Place one chop on each of four serving plates and sprinkle chops with thyme.
Tip: To keep the sodium in this dish in check, choose natural pork rather than enhanced pork.
