  • Bring a large pot of water to a boil. Add tortellini and cook until just tender, about 4 minutes. Drain.

  • Meanwhile, whisk feta, oil, vinegar, oregano, pepper and salt together in a large bowl. Add tomatoes, cucumber, spinach, red onion and the cooked tortellini. Toss to coat.

Tasty. The dressing is much better if it's allowed to sit overnight. I added sauteed shrimp for more Protein. Fresh herbs to replace the salt would've been nicer but it's still very tasty. Also I'm not a huge fan of tomatoes or onions so I made my salad out of black olives spinach and english cucumbers. Read More
