1 overripe orange
2 overripe limes
2 tablespoons Dijon-style mustard
4 cloves garlic, peeled
¼ teaspoon salt
¼ cup olive oil
Remove ¼ teaspoon zest (set aside) and squeeze ¼ cup juice from orange and limes. In a blender, cover and blend orange and lime juice, mustard, garlic, and salt until combined. With blender running, slowly add oil in a steady stream until mixture is thick.
Transfer vinaigrette to a small bowl or storage container. Stir in orange and lime zest.
Tip: Serve vinaigrette over greens or steamed vegetables.
