Orange and lime combine with Dijon mustard and garlic to make a quick, easy vinaigrette that's as tasty on freshly cooked vegetables as it is on salad.

  • 1 overripe orange
  • 2 overripe limes
  • 2 tablespoons Dijon-style mustard
  • 4 cloves garlic, peeled
  • ¼ teaspoon salt
  • ¼ cup olive oil

  1. Remove ¼ teaspoon zest (set aside) and squeeze ¼ cup juice from orange and limes. In a blender, cover and blend orange and lime juice, mustard, garlic, and salt until combined. With blender running, slowly add oil in a steady stream until mixture is thick.
  2. Transfer vinaigrette to a small bowl or storage container. Stir in orange and lime zest.
  • Tip: Serve vinaigrette over greens or steamed vegetables.
