2 tablespoons butter, softened
1 tablespoon very finely chopped onion
2 teaspoons snipped fresh tarragon
1 clove garlic, minced
½ teaspoon finely shredded lemon peel
¼ teaspoon salt
¼ teaspoon black pepper
12 ounces fresh haricots verts or other thin green beans (4 cups)
In a small bowl by hand beat together butter, onion, tarragon, garlic, lemon peel, salt, and pepper. Cover and chill until ready to use (see Tip).
Rinse beans; drain. If desired, trim tips off beans. Place a steamer basket in a large skillet. Add water to just below the bottom of basket. Bring water to boiling. Add beans to steamer basket. Cover skillet and steam for 5 to 6 minutes or until beans are crisp-tender. Drain.
To serve, place green beans on a serving platter or on four serving plates. Top with small spoonfuls of the herbed butter. Spread butter over beans.
Tip: Consider making a double batch of the herb butter. Freeze the extra and you'll be that much closer to serving this delectable dish next time you crave it.
