Baked Sweet Potato Fries

“When you're looking for a change from regular french fries, whip up a batch of these easy baked sweet potato fries that are high in fiber, calcium and vitamin A.”
Nonstick cooking spray
1 pound sweet potatoes
2 teaspoons olive oil
1Preheat oven to 400°F. Line a baking sheet with foil or parchment paper. Lightly coat foil with cooking spray; set aside. Peel sweet potatoes and cut lengthwise into ½-inch-thick strips. Spread sweet potatoes on prepared baking sheet. Drizzle with the olive oil and toss to coat. Arrange in a single layer.
2Bake for 25 to 30 minutes or until golden brown, stirring once halfway through baking. Divide sweet potatoes among four serving plates.
