4 (4 ounce) boneless pork loin chops
2 tablespoons Honey-Dijon mustard
Preheat oven to 400°F. Place pork chops in a baking dish. Brush pork chops evenly with mustard and sprinkle with pepper. Bake, covered with foil, about 30 minutes or until internal temperature is 145°F. Place one chop on each of four serving plates.
