Cut 1 cucumber slice in half and place in a cocktail shaker. Add sugar and muddle together. Add Pimm's, lemon juice and ice. Shake well, then strain into a Collins glass filled with fresh ice. Top with club soda and stir to chill. Garnish with the remaining cucumber slice, lemon slice and fresh mint, if desired.
