Strawberry-Mint-Mango Granita

“Try this refreshing minty-fruit flavored ice on a hot summer day.”

Ingredients

    • 10 ounces fresh strawberries (2½ cups)
    • 1½ cups no-sugar-added mango juice blend, such as Ceres™ brand
    • ¼ cup fresh mint leaves
    • 3 tablespoons sugar (see Tip)
    • 2 tablespoons lime juice or lemon juice
    • 10 tablespoons light frozen whipped dessert topping, thawed
    • Chopped fresh strawberries (optional)
    • Fresh mint leaves (optional)

Directions

  • 1 In a blender combine the 10 ounces strawberries, the mango juice, the ¼ cup mint, the sugar and lime juice. Cover and blend until completely smooth.
  • 2 Pour mixture into a 3-quart rectangular baking dish. Freeze 30 minutes, stir with a fork. Continue to freeze for 2 to 2½ hours more or until firm throughout, scraping and stirring mixture every 30 minutes.
  • 3 To serve, use the fork to scrape mixture into fine bits resembling snow. Spoon into serving glasses and top with whipped topping. If desired, garnish with chopped strawberries and additional fresh mint.
  • Tip: If using a sugar substitute, choose from Splenda(R) Granular, Equal(R) Spoonful or packets, Sweet'N Low(R) bulk or packets, or Truvia(R) Spoonable or packets. Follow package directions to use product amount equivalent to 3 tablespoons sugar. Nutrition per serving with substitute, same as below, except: 43 calories, 10 g carbohydrate, 7 g total sugar
