Try this refreshing minty-fruit flavored ice on a hot summer day.

  • 10 ounces fresh strawberries (2½ cups)
  • 1½ cups no-sugar-added mango juice blend, such as Ceres™ brand
  • ¼ cup fresh mint leaves
  • 3 tablespoons sugar (see Tip)
  • 2 tablespoons lime juice or lemon juice
  • 10 tablespoons light frozen whipped dessert topping, thawed
  • Chopped fresh strawberries (optional)
  • Fresh mint leaves (optional)

  1. In a blender combine the 10 ounces strawberries, the mango juice, the ¼ cup mint, the sugar and lime juice. Cover and blend until completely smooth.
  2. Pour mixture into a 3-quart rectangular baking dish. Freeze 30 minutes, stir with a fork. Continue to freeze for 2 to 2½ hours more or until firm throughout, scraping and stirring mixture every 30 minutes.
  3. To serve, use the fork to scrape mixture into fine bits resembling snow. Spoon into serving glasses and top with whipped topping. If desired, garnish with chopped strawberries and additional fresh mint.
  • Tip: If using a sugar substitute, choose from Splenda® Granular, Equal® Spoonful or packets, Sweet'N Low® bulk or packets, or Truvia® Spoonable or packets.
