  • 12 ounces thin fresh green beans, trimmed
  • 1 small red sweet pepper, seeded and cut into strips
  • 2 slices bacon
  • ¼ cup chopped walnuts
  • 2 cloves garlic, minced
  • ⅛ teaspoon crushed red pepper
  • ¼ teaspoon salt

  1. In a large saucepan, cook green beans and sweet pepper in enough boiling water to cover for 3 minutes; drain.
  2. In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove bacon from skillet, reserving 2 tablespoons of the drippings in skillet (discard the remaining drippings). Drain bacon on paper towels. Crumble bacon; set aside.
  3. Add green bean-sweet pepper mixture, walnuts, garlic, crushed red pepper and ¼ teaspoon salt to the reserved drippings in skillet. Cook and stir about 5 minutes or until beans are tender and walnuts are lightly toasted.
  4. To serve, sprinkle with crumbled bacon.
