12 ounces thin fresh green beans, trimmed
1 small red sweet pepper, seeded and cut into strips
2 slices bacon
¼ cup chopped walnuts
2 cloves garlic, minced
⅛ teaspoon crushed red pepper
¼ teaspoon salt
In a large saucepan, cook green beans and sweet pepper in enough boiling water to cover for 3 minutes; drain.
In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove bacon from skillet, reserving 2 tablespoons of the drippings in skillet (discard the remaining drippings). Drain bacon on paper towels. Crumble bacon; set aside.
Add green bean-sweet pepper mixture, walnuts, garlic, crushed red pepper and ¼ teaspoon salt to the reserved drippings in skillet. Cook and stir about 5 minutes or until beans are tender and walnuts are lightly toasted.
