  • Trim fat from meat. If using beef, cut steak across the grain into thin strips. If using chicken, cut breast halves lengthwise into thin strips. Sprinkle strips with black pepper and, if desired, cayenne pepper. Thread strips, accordion-style, onto sixteen 6- to 8-inch skewers (see Tip).

  • Place skewers on the unheated rack of a broiler pan. Broil 3 to 4 inches from the heat until beef is slightly pink in the center or chicken is no longer pink, turning once halfway through broiling. Allow 4 to 6 minutes for beef or 9 to 10 minutes for chicken.

  • Meanwhile, in a small saucepan, combine peanut butter, water, soy sauce, green onion, and ginger. Heat over medium-low heat until peanut butter is melted and mixture is smooth, whisking constantly. Sprinkle with crushed red pepper. Serve warm peanut sauce (see Tip) with skewers.


Tip: If using wooden skewers, soak in enough water to cover for at least 30 minutes before using.

If sauce starts to separate before serving, stir well to combine.
