  • 3 cups orange juice
  • 4 envelopes unflavored gelatin
  • 1 cup cold pineapple juice
  • 1 (11 ounce) can mandarin oranges, drained
  • 1 (8 ounce) can pineapple tidbits (juice pack), drained

  1. In a small saucepan, bring orange juice just to boiling.
  2. In a large bowl, sprinkle gelatin over cold pineapple juice. Let stand 1 minute. Add orange juice and stir until gelatin is dissolved, about 5 minutes. Pour into a 3-quart baking dish.
  3. Chill 30 minutes or until partially set (the consistency of unbeaten egg whites). Stir in drained mandarin oranges and pineapple.
  4. Refrigerate until firm, 3 to 4 hours. Cut into 1-inch cubes to serve.
