In a large bowl, sprinkle gelatin over cold pineapple juice. Let stand 1 minute. Add orange juice and stir until gelatin is dissolved, about 5 minutes. Pour into a 3-quart baking dish.
Chill 30 minutes or until partially set (the consistency of unbeaten egg whites). Stir in drained mandarin oranges and pineapple.
Refrigerate until firm, 3 to 4 hours. Cut into 1-inch cubes to serve.
