1 cup canned reduced-sodium black beans, rinsed and drained
6 tablespoons mild salsa, such as Newman's Own® brand
½ teaspoon ground cumin
4 tostada shells, such as Old El Paso® or Ortega® brand
4 tablespoons refrigerated guacamole, such as Wholly Guacamole® Classic brand
1 cup chopped romaine lettuce
Sliced green onion (optional)
Chopped tomatoes (optional)
In a medium saucepan, stir together beans, salsa, and cumin. Heat through.
Meanwhile, heat tostada shells in a microwave according to package directions. Divide bean mixture evenly among tostada shells. Spoon 1 tablespoon of the guacamole onto each. Top with romaine. If desired, garnish with onion and tomato.
