Vegetarian tostadas, topped with savory black beans, lettuce, and guacamole, make a perfect quick lunch that kids will love.

  • 1 cup canned reduced-sodium black beans, rinsed and drained
  • 6 tablespoons mild salsa, such as Newman's Own® brand
  • ½ teaspoon ground cumin
  • 4 tostada shells, such as Old El Paso® or Ortega® brand
  • 4 tablespoons refrigerated guacamole, such as Wholly Guacamole® Classic brand
  • 1 cup chopped romaine lettuce
  • Sliced green onion (optional)
  • Chopped tomatoes (optional)

  1. In a medium saucepan, stir together beans, salsa, and cumin. Heat through.
  2. Meanwhile, heat tostada shells in a microwave according to package directions. Divide bean mixture evenly among tostada shells. Spoon 1 tablespoon of the guacamole onto each. Top with romaine. If desired, garnish with onion and tomato.
