3 medium red cooking apples, cored and cut into 1-inch wedges
2 cups frozen unsweetened pitted dark sweet cherries
1 cup seedless red grapes
2 tablespoons light butter with canola oil, melted
2 teaspoons lemon juice
2 teaspoons honey
½ teaspoon ground cinnamon
3 cups no-sugar-added vanilla ice cream
Chopped pecans (optional)
Fresh mint (optional)
1Preheat oven to 375°F. In a 3-qt. rectangular baking dish combine apples, cherries, and grapes. In a small bowl combine melted butter, lemon juice, honey, and cinnamon. Drizzle mixture over fruit; toss to coat. Roast 25 minutes or until tender, gently stirring once.
2Serve roasted fruit with ice cream and, if desired, top with pecans and mint.
