Roasted Fruit

“The natural sweetness of the apples, cherries, and grapes is brought out by roasting. Top the roasted fruit with no-sugar-added ice cream for a refreshing treat.”


    • 3 medium red cooking apples, cored and cut into 1-inch wedges
    • 2 cups frozen unsweetened pitted dark sweet cherries
    • 1 cup seedless red grapes
    • 2 tablespoons light butter with canola oil, melted
    • 2 teaspoons lemon juice
    • 2 teaspoons honey
    • ½ teaspoon ground cinnamon
    • 3 cups no-sugar-added vanilla ice cream
    • Chopped pecans (optional)
    • Fresh mint (optional)


  • 1 Preheat oven to 375°F. In a 3-qt. rectangular baking dish combine apples, cherries, and grapes. In a small bowl combine melted butter, lemon juice, honey, and cinnamon. Drizzle mixture over fruit; toss to coat. Roast 25 minutes or until tender, gently stirring once.
  • 2 Serve roasted fruit with ice cream and, if desired, top with pecans and mint.
