Lemon peel and honey add the perfect flavor combination to this easy appetizer.

  • ¼ cup light ricotta cheese
  • 1 tablespoon honey
  • ½ teaspoon finely shredded lemon peel
  • ¾ cup fresh blueberries, coarsely chopped
  • 4 slices whole grain bread, toasted
  • ¼ cup sliced almonds, toasted (see Tips)

  1. In a small bowl combine ricotta cheese, honey and lemon peel. Stir in coarsely chopped blueberries. Cut bread slices diagonally into four pieces.
  2. Divide blueberry mixture among bread pieces. Sprinkle with toasted almonds.
  • Tips: To toast whole nuts or large pieces, spread in a shallow baking pan lined with parchment paper. Bake in a 350°F oven for 5 to 10 minutes or until golden, shaking pan once or twice.
