  • 2 medium potatoes, peeled and cubed
  • 1 medium sweet potatoes
  • Nonstick cooking spray
  • ½ of a 14-ounce ring smoked turkey sausage, halved lengthwise and sliced ½-inch thick
  • ½ cup chopped green sweet pepper (1 small)
  • ½ cup chopped onion (1 medium)
  • 1 tablespoon snipped fresh sage or 1 teaspoon dried sage, crushed
  • ¼ teaspoon ground black pepper

  1. Preheat oven to 400°F. Place russet and sweet potatoes on a 15x10x1-inch baking sheet. Lightly coat with nonstick cooking spray and toss to coat.
  2. Bake 20 minutes or until tender and lightly browned, turning once with spatula.
  3. Meanwhile, in a large nonstick skillet, cook sausage, sweet pepper and onion for 8 to 10 minutes or until tender. Stir in sweet potato mixture, sage, and pepper.
