  • In a blender, combine juice mixture, the ice cubes, vodka, and snipped mint. Cover and blend until smooth. Pour 1/4 cup of the blended mixture into each of 12 glasses. Top each with 1/4 cup of the Prosecco. Garnish with lemon slices or raspberries and mint leaves.

Tips

Variation: Nonalcoholic Pink Lemon Spritzer: Prepare as directed, except omit vodka and sugar, increase pomegranate juice or cranberry juice to 1 cup, use sugar substitute equivalent to 1 tablespoon sugar, and substitute diet or regular ginger ale for the Prosecco.
