Similar to sloppy joes but with more vegetables, these delicious sandwiches are made in the slow cooker.

  • 1 pound extra-lean ground beef
  • 1 cup frozen mixed vegetables
  • 1 cup diced green sweet pepper
  • ⅓ cup no-salt-added tomato paste ( ½ of a 6-ounce can)
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons Worcestershire sauce
  • ¾ teaspoon salt
  • 8 reduced-calorie whole grain hamburger buns

  1. In a large nonstick skillet cook ground beef until meat is brown. In a 1½-quart slow cooker combine cooked beef, frozen vegetables, sweet pepper, tomato paste, balsamic vinegar, Worcestershire sauce and salt.
  2. Cover and cook on low-heat setting for 4 hours or on high-heat setting for 2 hours. To serve, spoon about ½ cup beef mixture onto each bun bottom. Add bun tops.
  • Tip: For easy cleanup, line your slow cooker with a disposable slow cooker liner. Add ingredients as directed in recipe. Once your dish is finished cooking, spoon the food out of your slow cooker and simply dispose of the liner. Do not lift or transport the disposable liner with food inside.
