Vegetarian burgers served on whole-grain buns with basil and tomato make a great alternative to a beef burger when you are eating on the lighter side.

  • 1 (10 ounce) package frozen tomato-, basil-, and Parmesan cheese-flavor meatless burger patties
  • 4 slices mozzarella cheese (about 3 ounces total)
  • 2 thin multigrain sandwich rounds or 4 slices whole wheat bread
  • 8 to 12 fresh basil leaves
  • 4 slices tomato
  • Shredded fresh basil (optional)

  1. Prepare frozen patties according to package directions. Arrange patties on one side on a large baking sheet lined with foil. Top with cheese slices. Separate sandwich rounds and place, cut sides up, on the baking sheet with the patties.
  2. Broil 4 to 5 inches from the heat for 1 to 2 minutes or until cheese is melted and sandwich rounds are toasted. Divide basil leaves among sandwich rounds. Top each with a patty and a tomato slice. If desired, top with shredded basil.
