Roasted Pear with Crumble Topping

2 medium red pears, halved lengthwise
2 teaspoons butter, melted
¼ teaspoon vanilla
¼ cup regular rolled oats
2 tablespoons coarsely chopped pecans
1 tablespoon packed brown sugar (see Tips)
⅛ teaspoon salt
⅛ teaspoon ground cinnamon
½ cup light vanilla ice cream
1Preheat oven to 400°F. Line a 15x10-inch baking pan with parchment paper. Brush cut sides of pears with 1 teaspoon of the butter. Place, cut sides down, in one side of prepared pan. Roast 15 minutes.
2Meanwhile, in a small bowl stir together remaining 1 teaspoon butter and vanilla. Stir in oats, pecans, brown sugar, salt and cinnamon. Place in pan next to pears.
3Roast 8 to 10 minutes more or until pears are tender and oat mixture is golden, stirring oat mixture once. Cool slightly. Serve pears and oat mixture with ice cream.
Tips: If using a sugar substitute, choose Splenda® Brown Sugar Blend. Follow package directions to use 1 Tbsp. equivalent. Roast pears 18 to 20 minutes. Then add oat mixture to pan and roast 5 minutes more. Nutrition per serving with substitute, same as below, except: 149 calories, 14 g sugars
