4 cups (2 pints) strawberries
1 to 2 tablespoons sugar
2 tablespoons aged balsamic vinegar
2 tablespoons finely shredded fresh mint
1 tablespoon lemon juice
3 cups low-fat or fat-free vanilla frozen yogurt
Remove stems from strawberries; halve or, if large, quarter berries lengthwise. In a medium bowl combine strawberries, sugar, balsamic vinegar, mint, and lemon juice. Cover and refrigerate at least 20 minutes or for up to 4 hours.
To serve, spoon the strawberry mixture over scoops of frozen yogurt.
