This easy recipe is lightened up with sugar-free instant pudding and fat-free milk-and jazzed up with mint extract. The pretty layered desserts take only 15 minutes to prep.

  • 1 4-serving-size package sugar-free instant chocolate pudding mix
  • 2 cups nonfat milk
  • ¼ (8 ounce) container frozen light dessert topping, thawed, plus more for garnish
  • ⅛ teaspoon to ¼ teaspoon mint extract
  • Green food coloring or red food coloring (optional)
  • Mint sprigs (optional)

  1. Prepare pudding mix according to package directions, using the 2 cups nonfat milk. Set aside. In a small bowl, combine whipped topping, mint extract and, if desired, food coloring to obtain the desired color.
  2. In 8 small dessert bowls, layer half the pudding, followed by whipped topping and remaining pudding. Cover and chill for 2 hours or until set. If desired, top with whipped topping and mint.
