"Fried" Chicken Salad
Diabetic Living Magazine
“You can have lunch or dinner ready in 15 minutes thanks to convenience products, like precooked chicken that needs only a quick minute or two in the microwave.”
3 ounces frozen lightly breaded chicken chunks
2 to 3 cups packaged chopped romaine lettuce
1 tablespoon white balsamic vinegar
1 teaspoon olive oil
1 teaspoon honey mustard
1 teaspoon honey
⅛ teaspoon ground black pepper
6 cherry tomatoes, halved (3 ounces)
¼ cup whole-grain large-cut croutons, coarsely crushed
1Microwave chicken chunks according to package directions.
2Meanwhile, place romaine in a medium bowl. For dressing, in a tiny bowl whisk together vinegar, oil, honey mustard, honey and pepper. Drizzle dressing over romaine and toss to coat. Spoon romaine mixture onto a large dinner plate.
3Top salad with cherry tomatoes, hot cooked chicken and croutons.
