Granola Cream-Stuffed Apple

“For a satisfying snack, try this apple with creamy granola filling.”


    • 2 small baking apples, such as Honeycrisp, Braeburn, or Pink Lady
    • 3 tablespoons powdered peanut butter, such as PB2 brand
    • 2 teaspoons Greek yogurt cream cheese, such as Green Mountain brand
    • 2 tablespoons fat-free milk
    • 3 tablespoons sprouted grain crunchy cereal with almonds, such as Ezekiel brand
    • 2 teaspoons honey


  • 1 Cut apples in half crosswise. Using a melon baller, remove cores creating a well in each apple half. Arrange apples, cut sides up, in a 1½-quart square baking dish.
  • 2 In a small bowl combine powdered peanut butter, cream cheese and milk. Spoon mixture into the center of each apple and top with cereal.
  • 3 Cover dish with vented plastic wrap. Microwave on high (100%) power for 3 to 3½ minutes or until apples are heated through. Drizzle with honey.
