  • 2 small baking apples, such as Honeycrisp, Braeburn, or Pink Lady
  • 3 tablespoons powdered peanut butter, such as PB2 brand
  • 2 teaspoons Greek yogurt cream cheese, such as Green Mountain brand
  • 2 tablespoons fat-free milk
  • 3 tablespoons sprouted grain crunchy cereal with almonds, such as Ezekiel brand
  • 2 teaspoons honey

  1. Cut apples in half crosswise. Using a melon baller, remove cores creating a well in each apple half. Arrange apples, cut sides up, in a 1½-quart square baking dish.
  2. In a small bowl combine powdered peanut butter, cream cheese and milk. Spoon mixture into the center of each apple and top with cereal.
  3. Cover dish with vented plastic wrap. Microwave on high (100%) power for 3 to 3½ minutes or until apples are heated through. Drizzle with honey.
