½ cup refrigerated or frozen egg product, thawed, or 2 eggs, beaten
½ cup fat-free milk
½ teaspoon finely shredded orange peel
¼ teaspoon vanilla
⅛ teaspoon ground cinnamon or nutmeg
8 slices whole grain bread
Nonstick cooking spray
½ cup light pancake-and-waffle syrup product
¾ cup fresh blueberries
Fresh whole strawberries (optional)
In a shallow bowl, whisk together egg product, milk, orange peel, vanilla, and cinnamon. Dip bread into egg mixture, turning to coat both sides.
Coat an unheated large nonstick skillet or griddle with nonstick cooking spray. Preheat over medium heat. Place bread on hot skillet or griddle; cook for 4 to 6 minutes or until golden brown, turning once. Serve warm. Serve with syrup and blueberries. If desired, garnish individual servings with strawberries. Makes 4 servings (8 slices).
