Meat & Cheese Cucumber Roll-Ups Bento Box Lunch

“Thinly sliced cucumber is used as a low-carb wrap in this satisfying lunch recipe. Pile sandwich fillings like lunch meat, cheese and veggies on top of the cucumber slices, roll up and cut into bites like sushi. Round out this easy packable lunch with fresh fruit and veggies for a fun meal to take to work or school.”


    • 1 cucumber (8 inches)
    • 4 slices salami (1¼ ounces)
    • 2 slices low-sodium deli ham (1¼ ounces)
    • 2 slices low-sodium Swiss cheese (1¾ ounces)
    • ⅓ cup julienned carrots
    • 1 cup baby spinach
    • 1 kiwi, halved
    • 3 pitted black olives
    • 5 cherry tomatoes
    • 3 Colby-Jack cheese stars ( ¾ ounce)


  • 1 Using a mandoline or sharp knife, cut four ¼-inch-thick slices lengthwise from the center of the cucumber. Lay the slices side-by-side on a cutting board. Layer salami, ham, cheese, carrots and spinach on top of the cucumber slices. Cut the toppings between the cucumber slices so each cucumber slice has equal amounts of toppings. Roll each cucumber slice up around the filling and secure with 2 toothpicks. Cut each roll-up widthwise between the 2 toothpicks. Repeat with remaining 3 cucumber rolls. Place in the largest portion of the bento box.
  • 2 Fill the remaining bento box compartments with kiwi, olives, tomatoes and cheese stars.
