Peanut & Fresh Mint Vinaigrette

“Be sure to use unrefined peanut oil in this healthy salad dressing—it has a cleaner, smoother taste. Drizzle this vinaigrette on Vietnamese spring rolls or toss it with rice noodles, veggies and shrimp for a tasty noodle salad.”


    • ½ cup peanut oil
    • 1 teaspoon lime zest
    • ¼ cup lime juice
    • 1 tablespoon sliced scallion
    • 1 tablespoon chopped fresh mint
    • 1 teaspoon fish sauce
    • ½ teaspoon salt


  • 1 Combine oil, lime zest, lime juice, scallion, mint, fish sauce and salt in an 8-ounce mason jar. Shake vigorously until combined.
  • To make ahead: Refrigerate for up to 1 week; shake before serving.
