Honey-Lime Vinaigrette

“Use this healthy salad dressing to dress mixed greens or as a marinade for grilled chicken, shrimp or tofu.”

Ingredients

    • ½ cup corn oil
    • 1 teaspoon lime zest
    • ¼ cup lime juice
    • 2 teaspoons minced shallot
    • 1 teaspoon honey
    • ¾ teaspoon salt

Directions

  • 1 Combine oil, lime zest and juice, shallot, honey and salt in an 8-ounce mason jar. Shake vigorously until combined.
  • To make ahead: Refrigerate for up to 1 week; shake before serving.
