Apples contribute a touch of sweetness to a traditional cabbage slaw, and pecans give it a delicious crunchy finish. To save time, substitute 3 cups prepared coleslaw mix for the sliced cabbage and shredded carrots.

  • ¼ cup mayonnaise
  • 2 tablespoons cider vinegar
  • 1 tablespoon canola oil or avocado oil
  • 1 teaspoon poppy seeds
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • 2 medium apples, julienned
  • 2 cups thinly sliced green cabbage
  • 1 cup shredded carrot
  • ¼ cup coarsely chopped pecans or almonds, toasted

  1. Whisk mayonnaise, vinegar, oil, poppy seeds, salt and pepper together in a large bowl. Add apples, cabbage and carrot; toss to coat. Serve sprinkled with pecans (or almonds).

I have been making this for a few years, putting most of the same ingredients in mine. I was just winging it, and then I found YOUR recipe. My changes are Pepitas in place of the almonds/pecans and the addition of dried cranberries which goes well with the apples. I serve as a side with burgers, pulled pork sandwiches, and roast beef au jus. Thank you!
