Tender pressure-cooker roast beef leftovers become another easy dinner in this recipe for classic barbecue pulled beef sandwiches. The quick homemade barbecue sauce in this recipe is not only finger-licking good, it also has less sugar and sodium than store-bought versions.

  • 2 teaspoons olive oil
  • ¼ cup finely chopped onion
  • 1 (8 ounce) can no-salt-added tomato sauce
  • 2 tablespoons no-salt-added tomato paste
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon honey
  • 2 cups shredded pressure-cooked beef roast (see associated recipe)
  • 4 whole-wheat hamburger buns

  1. Heat oil in a medium nonstick saucepan over medium heat. Add onion; cook about 5 minutes or until tender, stirring occasionally. Add tomato sauce, tomato paste, mustard, Worcestershire and honey. Bring to a boil; reduce heat and simmer, uncovered, until slightly thickened, about 5 minutes. Add beef to the sauce, stirring to coat. Heat through.
  2. Split and toast buns. Spoon the meat mixture into the buns.
