Leftover pressure-cooked roast beef gets put to good use as another easy dinner in this recipe for easy beef tacos. We love our tacos topped with the classics—lettuce, cheese, salsa and sour cream—but put out all your favorite toppings and let everyone build their own.

  • 4 (8 inch) whole-wheat flour tortillas
  • 2 cups shredded lettuce
  • 2 cups shredded pressure-cooked beef roast (see associated recipe)
  • 1 cup chopped green and red bell peppers
  • ½ cup shredded reduced-fat Cheddar cheese
  • ½ cup salsa (optional)
  • ¼ cup light sour cream (optional)

  1. Place a tortilla on each of 4 serving plates. Divide lettuce among tortillas. Top with beef, peppers and cheese. Garnish with salsa and sour cream, if desired.
