This was lunch! I needed something different!
This is kind of an inverted taco pie w/cornbread top!
Just crispier! Don't skip the crust add ins, they make a big difference!
I kicked up the beans with cumin and a little salsa verde!
Topped with fave veggies, and, soy pepper jack chz.
Shared with my neighbor, we both loved it!!
I warmed some spiced plums I made last night as a side. Perfect!!!
