Sweet potato takes the place of bread in this tartine-like recipe. Serve with extra greens dressed with balsamic vinaigrette for a light lunch.

  • 1 large slice sweet potato ( ¼ inch thick)
  • 2 tablespoons herbed soft goat cheese
  • 1 radish, sliced
  • 2 teaspoons microgreens
  • ¼ teaspoon lemon zest

  1. Toast sweet potato in a toaster or toaster oven until just cooked through and starting to brown, 12 to 15 minutes. Top with goat cheese, radish, microgreens and lemon zest.

Made the potato toasts to have different ways. Did this one today and it is wonderful. The potato and cheese together is a hit. i did another one posted in Eating well with an egg on top yesterday. I roasted the potato slices 425 degress 10-12 minutes & keep what I don't use for later. I give the slice of potato a toast setting in the toaster oven before using.
