Chicken, Quinoa & Veggie Bowl

    • ½ cup cooked quinoa (see associated recipes)
    • ¾ cup shredded cooked chicken breast (see associated recipes)
    • 1 cup roasted root vegetables (see associated recipes)
    • 1-2 tablespoons vinaigrette (see associated recipes)


  • 1 Combine the quinoa, chicken and roasted vegetables in a bowl. Drizzle with vinaigrette to taste.
  • To make ahead: Pack this bowl in advance by layering the ingredients in a mason jar. Start with the dressing on the bottom; follow with the chicken, quinoa and vegetables.
