Make a snack-sized pizza fast and easy with corn tortillas instead of a traditional dough or crust. This snack recipe is so easy, the kids will like helping make it as much as they'll love to eat it.

  • 1 (6 inch) corn tortilla
  • 1 tablespoon pizza sauce
  • 2 tablespoons shredded part-skim mozzarella cheese
  • 1 tablespoon mini pepperoni

  1. Preheat toaster oven or regular oven to 400°F.
  2. Spread tortilla with pizza sauce. Sprinkle with mozzarella and top with pepperoni.
  3. Bake on the toaster oven pan or on a small baking sheet until the cheese is bubbling and the tortilla has crisped, 6 to 8 minutes.

Made this and it was tasty and satisfying for my junk food craving. Can't beat it for the calories. The tortilla was a little flimsy on the inside, so next time I might try baking it for a few minutes first before topping it with anything.
