We love finding new ways to use our kitchen tools and appliances. These toaster-oven quesadillas with peppers and avocado are the perfect example of an unexpected toaster-oven hack we had to share.

  • 2 corn tortillas
  • ¼ avocado, mashed
  • ½ medium bell pepper, diced
  • ¼ cup shredded Cheddar cheese
  • ¼ cup salsa
  • Hot sauce to taste (optional)

  1. Lay tortillas on work surface. Spread half of each tortilla with avocado. Top with pepper slices and Cheddar. Fold in half. Transfer to a foil-lined toaster-oven pan. Set in toaster oven and toast until the cheese is melted, about 10 minutes.
  2. Cut in half and serve with salsa and hot sauce if desired.

Toaster does just as good of a job crisping the tortilla and melting the inside, if not better, than the stove top. Made with black beans for extra protein. Would definitely make again.
