Cottage Cheese and Roasted Tomato Topped Potato

“A baked russet potato is topped with roasted cherry tomatoes, cottage cheese, and fresh chives for an easy, weeknight side dish or light dinner.”


    • ½ cup red and/or yellow cherry tomatoes
    • 2 teaspoons olive oil
    • 1 (6 ounce) russet potato, baked
    • ¼ cup 2% low-fat cottage cheese
    • 1 teaspoon snipped fresh chives


  • 1 Preheat oven to 425°F. In a 2-quart baking dish combine the tomatoes and olive oil. Roast for about 20 minutes or until tomatoes burst open. Top potato with cottage cheese, roasted tomato mixture, and chives.
