  • ½ cup red and/or yellow cherry tomatoes
  • 2 teaspoons olive oil
  • 1 (6 ounce) russet potato, baked
  • ¼ cup 2% low-fat cottage cheese
  • 1 teaspoon snipped fresh chives

  1. Preheat oven to 425°F. In a 2-quart baking dish combine the tomatoes and olive oil. Roast for about 20 minutes or until tomatoes burst open. Top potato with cottage cheese, roasted tomato mixture, and chives.
