  • Using a drinking glass or circle cookie cutter, cut out a sandwich-size circle from each slice of bread. Using a shot glass or small circle cookie cutter, cut out 3 small circles from the bread scraps.

  • Spread hummus on one large bread circle. Stick 2 small bread circles at the top to create ears and top each with a cucumber slice. Cover the rest of the hummus with cucumber slices. Top with the other large bread circle.

  • Place the last small bread circle on the sandwich, topping it with a cucumber slice and half an olive to make the nose. Place an olive half on either side of the nose to make the eyes. (You'll have 1 olive half left over.)
