Basic Beauty Bowl

¼ cup tahini
1-2 tablespoons lemon juice
¼ cup warm water
Sea salt and freshly ground black pepper
1 cup cooked lentils
1 cup cooked quinoa
1 cup cubed and steamed sweet potato
¼ cup halved cherry tomatoes
4 kale leaves, cut into ¼-inch slices
1 watermelon radish, cut into ⅛-inch slices
½ avocado, peeled, pitted and cut into ¼-inch slices
1For the dressing, whisk the tahini, lemon juice to taste and water in a small bowl. Season with salt and pepper.
2Divide the lentils and quinoa between 2 bowls and top with the sweet potato, tomatoes, kale, radish and avocado. Drizzle with the tahini dressing. Top with pumpkin seeds, hemp hearts and lemon wedges, if desired.
