Basic Beauty Bowl

Ingredients

    • Tahini Dressing
    • ¼ cup tahini
    • 1-2 tablespoons lemon juice
    • ¼ cup warm water
    • Sea salt and freshly ground black pepper
    • Bowl
    • 1 cup cooked lentils
    • 1 cup cooked quinoa
    • 1 cup cubed and steamed sweet potato
    • ¼ cup halved cherry tomatoes
    • 4 kale leaves, cut into ¼-inch slices
    • 1 watermelon radish, cut into ⅛-inch slices
    • ½ avocado, peeled, pitted and cut into ¼-inch slices
    • Pumpkin seeds, hemp hearts (shelled hemp seeds) and/or lemon wedges for garnish

Directions

  • 1 For the dressing, whisk the tahini, lemon juice to taste and water in a small bowl. Season with salt and pepper.
  • 2 Divide the lentils and quinoa between 2 bowls and top with the sweet potato, tomatoes, kale, radish and avocado. Drizzle with the tahini dressing. Top with pumpkin seeds, hemp hearts and lemon wedges, if desired.
