  • Miso Ginger Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons miso paste
  • 1 tablespoon toasted sesame oil
  • Juice of 1 lime
  • 1-inch piece of fresh ginger, chopped
  • Sea salt and freshly ground black pepper
  • Brunch Bowl
  • 1 cup cooked brown rice
  • 1 small raw beet, grated
  • 2 small carrots, grated
  • ½ avocado, peeled and pitted
  • ½ cup arugula
  • 1 tablespoon olive oil
  • Juice of ½ lemon
  • Sea salt and freshly ground black pepper
  • 2 soft- or hard-boiled eggs

  1. To make the dressing, combine the olive oil, miso, sesame oil, lime juice and ginger in a food processor and blend until smooth. Season with salt and freshly ground black pepper.
  2. Divide the brown rice, beet, carrots, avocado and arugula between 2 bowls. Drizzle with the olive oil and lemon juice and season with salt and freshly ground black pepper. Top with the eggs and drizzle with the miso ginger dressing.
