Instructions Checklist
  • To make the dressing, combine the olive oil, miso, sesame oil, lime juice and ginger in a food processor and blend until smooth. Season with salt and freshly ground black pepper.

  • Divide the brown rice, beet, carrots, avocado and arugula between 2 bowls. Drizzle with the olive oil and lemon juice and season with salt and freshly ground black pepper. Top with the eggs and drizzle with the miso ginger dressing.
